FAT BOY’S BREAKFAST
1 16 oz. Box of Slow Cooking or Quick grits
½ lb. Cheddar, Colby or Monterrey Jack cheese – cubed
4 oz or Cream Cheese
2 Eggs – beaten
2 Tbsp. Butter
2 Tbsp. Garlic – minced (or to taste)
1-2 Tbsp. Hot sauce (Tobasco or your favorite)
Salt & Pepper to taste
Preheat oven to 350 degrees. Coat a large casserole dish with butter or a spray release product. Cook grits according to package directions. Add approximately one cup of the hot cooked grits to the beaten eggs and mix well. Add the egg and grit mixture back to the pot of grits. Add the cheese, butter, garlic, and hot sauce. Mix until well combined and cheese is incorporated.
*Pour into greased casserole dish and back 30-45 minutes or until lightly browned on top.
*You can freeze before baking, thaw and bake as directed. Tastes great.
I have made these grits every year for about 25 years.....for up to 75 people. It has become a tradition. While I no longer bring them to my former workplace I still make them and send them to my husband's place of work and take them to family gatherings. This is the week of the Garlic Cheese Grits!
