One little thing I forgot to add to the post about Pimento Cheese....THE RECIPE! Giving my self the old side eye,
1 cup Shredded Sharp Cheddar cheese
1 cup Shredded Monterrey Jack (with or w/o peppers)
½ to 1 cup Mayonnaise
1 tsp. Hot Sauce (Tabasco or other brand)
¼ to ½ cup of Pimentos OR Wickles Sandwich Relish (love a little spicy heat)
¼ to ½ cup of Chopped Pecans (optional, but recommended)
Mix all ingredients until smooth and creamy to the perfect texture for you and yours.
Serve on crackers, breads or the famous celery stick. Makes an awesome grilled sandwich!
