Survivor Dinner Menu

Each wednesday night we have the following for dinner during 'Survivor' season.  Just us and Jeff Probst and the crazy castaways.  Don't judge us on our television choices....

Cajun Flounder
2 – 8oz Flounder Filets (or your favorite mild flaky fish)
2 Tbls Cajun Seasoning
1 Tbls Butter
1 Tbls Olive Oil
1Lemon, cut into wedges

Sprinkle fish filets with Cajun seasonings on both sides. Heat a sauté pan over med high heat, add butter and oil heat until just at smoking point. Add fish and cook approximately 3-4 minutes, turn and cook another 3 minutes or until flaky and no longer translucent. Squeeze a wedge of lemon over each filet, serve immediately.

Creamed Spinach

1 lb. Fresh Spinach
1tsp Olive Oil
1tsp Butter
2-3 Tbl Cream Cheese
¼ Cup Fresh Grated Parmigiano Reggiano Cheese
3-4 Grating of Nutmeg
Salt & Pepper to taste

In a large sauté pan heat oil and butter until just smoking. Add ½ of spinach sprinkle with s & p, cook until wilted. Add ½ of cream cheese and parm stir until mixed. Add the other ½ of spinach cook until wilted and add remaining cheese and nutmeg. Adjust s&p if necessary. If mixture is to thick for your taste add a splash of cream of milk until your consistency is reached. Serve immediately. Serves 2-3.

Baked Potatoes

Pre-heat oven or toaster oven to 425 degrees.  Wash and prick potatoes with a fork.  Put potatoes in oven for approximately 45-60 minutes, depending upon the size of the potatoes.  Remove from oven when they are tender when pierced with a fork.  Serve with your favorite toppings.
