This is one of the things I will be doing this weekend. Making meatballs, lots of meatballs. As in 10 -12 pounds worth of meatballs. We are getting ready for a family celebration, a wedding!! This is one of the items we will be serving and scarfing at the reception. I can't wait. I love these things.
1 Cup Fresh Bread Crumbs
1/3 Cup Milk
1/3 Cup Olive Oil
1 Cup Minced Onion
1/2 lb Ground Beef
1/2 lb Ground Port
1/2 lb Ground Veal
1 lg Egg, lightly beaten
1/3 Cup Freshly grated Parmesan
1/4 Cup minced Fresh Italian Parsley
2 lg Garlic Cloves, minced
Salt & Pepper to taste
In a small bowl combine the bread crumbs and milk let soak for 10 minutes. In a large skillet heat 2 tbls of the olive oil and cook onion for 3 minutes, remove from heat and allow to cool.
In a large bowl combine ground meats, soaked bread crumbs, cooked onion, egg, parmesan, parsley, garlic and salt & pepper. Mix well, this is easily done with hands (maybe someone else's? :) Shape mixture into 1 1/2 inch balls, a small ice cream scoop works great for this task.
In the same large skillet heat 2 more tbls of olive oil and cook the meatballs in 3-4 batches until browned on all sides, about 10 minutes. When meatballs are br0wned, transfer them to a side plate, add more oil to the skillet if needed and continue to cook the remainder.
Add the br0wned meatbalss to the sauce of your choice. Below is my favorite recipe for sauce when serving these as an appetizer.
1 16 oz Bottle of Chili Sauce
1 12 oz Bottle of Grape Jelly
1 Large Lemon, juiced
Mix all above ingredients, put in a crock pot along with the meatballs. Cook on low for 4-5 hours.
