Basil is excellent for soooo many summer dishes. Anything Italian, well almost, uses basil. It has a sweet herbal scent reminiscent of licorice (which I hate) but I love basil. Pick some fresh leaves, slice a red ripe tomato, slice some fresh mozzarella overlap each on a platter and drizzle with olive oil, balsamic vingar and s&p to taste. Enjoy with a crusty piece of bread and your favorite wine.
